2019 Dijons Pinot Noir
Our 2019 Dijons Pinot Noir is comprised of 2 separate Clones from 2 separate vineyard sites that are all organically farmed by Owner/Winemaker Jess Wade. In the cool of the night, we drove our tractors between the 2 vineyards hand picking and sorting to ensure only the best fruit comes into the winery. Hand sorted once more in the winery, each clone is fermented separately with only native yeasts.
The final blend is composed of 56% Clone 115, 44% Clone 114, 8 with each fermentation containing 50% whole clusters. Our carefully chosen final blend aged for 16 months in 29% New French Oak, racked once and bottled unfined and unfiltered.
